Maqluba

المقلوبة

Rice cooked over meat or chicken and fried vegetables, aubergine, potato, cauliflower, then turned upside down onto the tray, which gives it its name, and served with yoghurt or salad. WAFA’s information centre traces it to the coast, where it was made with fish and called sayyadiyya, before it spread to the hills with chicken and meat. In Gaza it is a dish of Ramadan and of Eid.
