Olive oil: the harvest and the press

زيت الزيتون: الجدّاد والمعصرة

The olive, cultivated in Palestine since the Canaanites some five thousand years ago, grows on terraces (salassel al-zaytoun) from Acre and Safad to the hills of Nablus, Jerusalem and Hebron. Its harvest, al-jaddad, is a celebrated season every year, the olives picked by hand or with the jaddadeh; the olives were crushed in stone presses, the badd, a pierced stone turned by animals or people, and the paste pressed in wicker baskets, later in iron screw presses from about 1890 on. The oil, stored in jars, was the country’s chief export with soap; “oil builds the house,” the saying goes. Bari, Nabali, Suri and other varieties are grown.
