Mulukhiyya

الملوخية

Jute mallow leaves, picked, cleaned and chopped very fine by hand, then cooked with garlic and small pieces of meat. In Gaza many families make it the first meal of Ramadan, an inherited custom: its green, the women say, promises good things. Some cook the leaves whole with meat and nuts, a dish Gazans call mulukhiyya burani.
